    Onions add flavour and depth to all kinds of dishes and can be roasted, sauteed, boiled or grilled. Onion in bread taste very different.


    Makes 1 Loaf

    1 Big onion, sliced
    31/2 cups plain flour
    1 tsp caster sugar
    2 tsp salt
    12 gms yeast
    2 tbs olive oil
    30 gms butter
    1 cup warm water
    1 small bunch fresh parsely
    sea salt and pepper


    Stir yeast and sugar into half the water. Keep it aside for 10 mins until foamy Sift flour and half the salt into a large bowl. Make a well in the centre. Add yeast mixture, olive oil and enough of remaining water until a soft dough forms Put little flour on slap and knead for 10mins or until dough is soft and elastic. Put this dough in a lightly oiled bowl and cover with plastic wrap. Leave it to rise for about an hour or until doubled in size. Meanwhile, melt butter in a pan on medium heat. Add onions and salt. cook for 10 mins or until onions are golden. Let it be cool. When dough has doubled, punch the dough to flate.Add onions and mix well through the dough. Oil a large baking tray and press the dough out to rectangle. Put little bit olive oil on top and push parsely into dough and sprinkle sea salt and pepper. Cover it with a tea towel and leave it for 15mins. Preheat oven at 200C Bake bread for 20mins or until top is golden. Serve hot with some curry and can have only bread.
