    This is a tasty, lively dish firm and crunchy textures and plenty of spice. It goes well for starter, and could also be used as dish with rice.


    Serve 4

    2 tablespoons oil
    1-2 red chillis-length wise, deseeded, and minced
    3 cloves garlic, minced
    2 sliced fresh ginger, minced
    1 spring onion, minced
    1 bunch spinach
    500 gms panner, big cubed
    1/2 tsp chilli flakes
    1/3 cup roasted peanuts, shells and skin removed
    salt acc to taste
    Few coriander leaves for garnishing.

    2 tablespoon soy sauce
    1 teaspoon sugar
    2 teaspoon vinger
    1 teaspoon chilli flakes


    Combine the Sauce ingredients in a bowl and set aside.
    Heat the oil in wok over high heat until very hot, and stir-fry the chili, garlic, ginger, salt, spring onion and panner. Stir-fry for 1 minute.
    Add the sauce and continue to cook for 4 to 5 minutes.
    Add the peanuts, stir-fry for 30 Seconds more or until the peanuts are heated through, and remove from the heat.
    In other pan put 1 tsp oil add spinach , salt and little chillie flakes. Cook for 3-4 min and keep it aside.
    Place in a serving dish first spinach and top up with Panner mixture, garnish with the coriander leaves and few roasted peanuts.
