    Its a easy, healthy and light dish.. Taste of couscous is wonederful. Nice dish for kids lunch box.


    1 1/2 couscous
    1 tablespoon olive oil
    2 cups vegetable stock or water :
    2 tablespoons olive oil
    1 medium red onion, chopped
    1 red capsicum, 1/2-inch
    1 green capsicum, 1/2-inch diced
    7 button mushrooms, cleaned and chopped
    2 green chillies chopped
    salt and pepper to taste
    2 tablespoons lemon juice


    In a 2 quart saucepan, saute 1 1/2 cups couscous with 1 tablespoon olive oil over medium heat until couscous is lightly browned (about 5 minutes). Slowly add 2 cup hot vegetable stock or water and bring to a boil. Reduce heat to medium low and cover. Simmer for 12 minutes or until liquid is absorbed.

    In a large pan, heat 2 tablespoons olive oil over medium heat. Add the onions,capsicums,mushrooms and saute until vegetables begin to soften. Season with salt, pepper and lemon juice. Continue to cook until most of the moisture from the vegetables has evaporated make sure not to over-cook the vegetables. Fold the sauteed vegetables into the cooked couscous and serve immediately..
