    NICE LIGHT ITALTIAN DISH


    Ingredients

    1 cup rice(gol small rice )(soaked)
    1onion(finely chopped)
    1cup mushrooms(in thin slices)
    1/2 cup pumpkin(small dices
    1/2 cup peas
    1tsp. garlic paste
    21/2 cup vegetable stock or water
    1/2 tsp. lemon juice
    1/4 cup cheese
    little fresh parsley 2 add favour
    3 tb.sp. butter
    Salt , pepper as per taste

    Directions

     In  pan add 2 tb.sp. butter, add onion fry them crisp then add rice to it , salt and cook it adding 2 cup veg. stock, cook rice 3/4 only leaving 1/4 to be cooked with the vegetables now in another pan add butter, garlic, mushrooms, peas and pumpkin add salt ,pepper to it cook it for 2-3 mins and add it to the 3/4 cooked rice then add 1/2 cup veg. stock and cook it till it gets dry now add lemon juice and parsley and mix well. Put in the plate and spread cheese on it and serve hot.
